Introduction: Today in America we are suffering an epidemic of obesity, heart disease, diabetes and cancer because people are eating the Standard American Diet (SAD) which is loaded with fat, salt, sugar and chemicals. Instead of eating a diet high in fruits, vegetables, nuts, seeds, whole grains and beans we are eating a diet of "food like" products that are processed and prepackaged - loaded with chemicals, toxins, antibiotics and pesticides. The goal of our industrial food system is not to produce healthy food but to produce profits.

Six years ago I underwent triple bypass open heart surgery. I was obese with high blood pressure and blood chemistry that was way out of whack. Recently I discovered the whole foods, plant based, way of eating and am already making huge strides towards health. I currently take three different blood pressure medications and drugs to reduce cholesterol.

By making a few simple lifestyle changes my goals for this next year are:
  • Healthy weight
  • Healthy blood pressure without the use of prescription drugs
  • Healthy cholesterol levels without the use of prescription drugs
  • Healthy physical condition so that I can enjoy hiking and other outdoor activities
  • Strong immune system
